to produce the best of practically everything known to the meat packer and butcher. It positively supplies every need in this line, from first-class joints of every description to cooked meats ready for the table. The depart- ment is famous throughout the Far East for its many kinds of delicious sausages and corned and smoked meats, so much so that ships often arrange with each other for supplies of the Company's products when unable to call at Hong Kong.
During the War, owing to the food shortage elsewhere, the authorities. invited the assistance of the department in supplying various food-stuffs for the troops. So successful was it in giving the necessary assistance that its superintendent was officially exempted from active service in order that he might devote his whole time and attention to its development. Large quantities of preserved products were provided by the department to the Military and the Navy and for troops in transit to many spheres of operations, Thus very useful war service was rendered. Rapid progress has been made in the department during recent years, and the demand for its products is continually increasing. Ham and bacon curing, practically a new line and in its infancy, has also made wonderful progress. It not only copes with an urgent local need but is proving its ability to satisfy a large export demand for good quality ham and bacon. After exhaustive experiments during recent years, although handicapped by the war inasmuch as up-to- date machinery was unobtainable, the canning department is now producing many kinds of excellent tinned foods to cope with the ever-increasing demand.
POULTRY.
House-fed capons and chickens demand recognition owing to the favour they command throughout the East. The Company has for many years made a speciality of feeding birds which are famed for their quality and flavour. The three poultry houses situated at Mains of Pokfulum have accommodation for between 5,000 and 6,000 head. They are attended to by experts and the premises are kept in a thoroughly sanitary condition. In recent years the Company has also undertaken the feeding of large num- bers of turkeys to meet the call for prime fat turkeys during the festive seasons at Xmas and New Year. Poultry are supplied killed and plucked. or alive according to the desire of the customer,
